Grilled cheese

Hardly a new culinary discovery, grilled cheese (CHEESE ONLY, unlike those greasy processed ”cheese” panini, called grilled cheese in some parts of the world) has been around the Mediterranean for centuries. It’s super simple, as long as you get the right kind of cheese. The Greek version, called Halloumi, is available in many parts of the world. The one in the picture above is similar to Feta, made locally in the Balkans.
